ROASTED PEPPER DIP

• bake or bbq peppers till soft and skins are charred
• place in bowl and cover to let the steam begin to loosen the skins
• after a few minutes of steaming the peels will come right off
• place in a food processor or blender with garlic (for best results use a garlic press)
• add olive oil in a slow stream while the machine is running
• add salt and pepper to taste

• combine rinsed chickpeas, lemon juice, garlic (use a garlic press), and  a bit of Tahini (Tahineh)
